My sister always made this awesome pasta dish and I finally made it last week. It was absolutely awesome and we couldn’t stop eating it. The recipe actually comes from a dish they serve at the Rainforest Cafe called Rasta Pasta. Here is the recpie as my sister makes it:
1 box farfalle pasta
2-3 garlic cloves chopped
olive oil
half bag or more baby spinach
bag broccoli florets fresh not frozen
1 roasted red pepper (can use jarred)
2-3 chicken breasts pounded thin – cut into small pieces
alfredo sauce (half jar or more)
pesto sauce (3T or more to taste)
shredded parmesan cheese
Grill chicken, set aside. Cook pasta till al dente. Saute garlic, add spinach, broccoli (I steam it first) red pepper and grilled chicken, cover and cook for 5-10 min. Stir in alfredo sauce and pesto, combine. Add pasta to mixture, combine. Sprinkle in parmesan cheese and mix.
We don’t use the roasted red pepper and instead of chicken, we used langostino tails we got at Trader Joe’s. It was SO good.
